  Recipe by:  ketowithdeedee Here’s how I made it: Pumpkin Roll 1 C Almond Flour 1/2 TSP Baking powder 1/2 TSP Baking soda 1 1/2 TSP Pumpkin pie spice 3 Eggs 3/4 C Granulated sweetener  @truvia 1 TSP Liquid pumpkin stevia  @steviaselect  (if you don’t have this you can use any liquid stevia or add an extra 1/4 C granulated sweetener) 2/3 C Pure pumpkin Great News! This is essentially the same as the famous Mississippi pot roast but cheaper protein lol 💥4 frozen chicken breasts 💥4 Oz Kerrygold butter 💥2 tbsp ranch seasoning 💥packet of au jus seasoning 💥handful of sliced pepperoncinis 💥1 cup of chicken broth (optional) 💣Place the chicken in crock pot and add everything to the top of the chicken. 💣cook 6-8 hours on low or 4 hours on high or until chicken easily shreds. Once shredded let the chicken sit in the juice to soak up extra moisture. Topped it on cauliflower mash. (Swipe for photo.. I like to add sour cream and cheese to this mix) I topped off the chicken with shredded cheddar cheese, bacon crumbles and more pepperoncinis 🤩

Pumpkin cookies 1/2 C butter, softened 2/3 C sweetener (I used half granulated & half golden  @sonourishedinc  ) 1 egg yolk 1/3 C pumpkin purée 1 TSP Vanilla (I also added in some Pumpkin spice  @oooflavors  to really give it a boost🎃) 1 3/4 C Almond Flour (if you have Lupin flour use 1/2 C Lupin & 1 1/4 C Almond which is what I did) 1 TSP pumpkin pie spice 1 TSP baking powder Dash of salt Mix butter and sweetener until fluffy. Add in egg yolk, pumpkin, and vanilla and mix until combined. Add in all other ingredients and mix. Roll your cookies into 8-10 balls and press them down slightly. Bake on a parchment lined cookie sheet at 350 for about 10-12 minutes.
