CHICKEN MUSHROOM & BROCCOLI CASSEROLE

  Recipe by:  ghostingcarbs Casseroles are one of my fave meals.  They're super easy to make, and they are great leftovers the next day.   This one is no different!   ⠀ ⠀ Ingredients:⠀ Chicken⠀ 2 tbsp olive oil ⠀ Mushrooms⠀ 1.5 cups broccoli florets ⠀ 2 cloves of chopped garlic ⠀ @flavorgod  ranch seasoning ⠀ Salt & pepper ⠀ Half cup chicken broth ⠀ 1/4 cup heavy whipping cream⠀ Pinch of xanthan gum⠀ 1/2 cup shredded mozzarella ⠀ Handful shredded parmesan⠀ Red pepper flakes ⠀ Parsley ⠀ ⠀ Great News! You Do NOT Have to Give Up Your Favorite  Bread, Sandwiches & Pizza  to Follow a 100%  Paleo  or  Ketogenic  Diet.. Korean Ground Beef W/ Fried Rice Style Cauli Rice...

Here's a good way to jazz up some ground beef y'all. One day off this weekend, then OJT starts Sunday. A week of nights, a week of days, then get turned loose on nights. Lotsa meal prepping coming up... 😁😁😁⠀

1 1/2 lbs ground beef⠀
1 green bell pepper ⠀
1/2 large red onion⠀
4oz fresh mushrooms ⠀
2 tbsps butter⠀

The sauce...⠀
1/4 cup coconut aminos⠀
1/4 cup brown swerve ⠀
1 tsp ground ginger⠀
2 tsps sesame oil⠀
1/2 tbsp sesame seeds⠀
Red pepper flake to taste, we did about a tsp⠀

Heat up that cast iron y'all !!! ⠀

1) Slice the pepper and cut into chunks, same with the onion, add a little oil to your skillet and throw all the veggies in. Fry til just tender. Set aside on a paper plate. ⠀
2) Brown up the ground beef on med high. We cooked it til the fat was cooked out, we did not drain, add 2 tbsps of butter and mix in..⠀
2) As the ground beef is cooking, mix all the sauce ingredients in a small bowl. Wisk and let sit..⠀
3) When the ground beef is done, add the veggies and mix. Salt to taste..Turn heat to med and pour in the sauce. Mix together and cover. Turn off heat and let sit for 5 minutes... ⠀

We added fried rice style cauli rice with 2oz of cream cheese and some butter melted in.... ⠀
