CHICKEN MUSHROOM & BROCCOLI CASSEROLE

  Recipe by:  ghostingcarbs Casseroles are one of my fave meals.  They're super easy to make, and they are great leftovers the next day.   This one is no different!   ⠀ ⠀ Ingredients:⠀ Chicken⠀ 2 tbsp olive oil ⠀ Mushrooms⠀ 1.5 cups broccoli florets ⠀ 2 cloves of chopped garlic ⠀ @flavorgod  ranch seasoning ⠀ Salt & pepper ⠀ Half cup chicken broth ⠀ 1/4 cup heavy whipping cream⠀ Pinch of xanthan gum⠀ 1/2 cup shredded mozzarella ⠀ Handful shredded parmesan⠀ Red pepper flakes ⠀ Parsley ⠀ ⠀ Great News! You Do NOT Have to Give Up Your Favorite  Bread, Sandwiches & Pizza  to Follow a 100%  Paleo  or  Ketogenic  Diet.. In a sauce pan, heat mushrooms in olive oil.  Stir in garlic, broccoli and seasoning.   Set aside.  ⠀ ⠀ In a baking dish, layer chicken (I seasoned and air fried the chicken) in the bottom and top with mushroom/broccoli mix.   In the same pan used to cook mushroom, add ch...

Tonight I made Mississippi chicken. This is essentially the same as the famous Mississippi pot roast but cheaper protein lol

💥4 frozen chicken breasts
💥4 Oz Kerrygold butter
💥2 tbsp ranch seasoning
💥packet of au jus seasoning
💥handful of sliced pepperoncinis
💥1 cup of chicken broth (optional)
💣Place the chicken in crock pot and add everything to the top of the chicken.
💣cook 6-8 hours on low or 4 hours on high or until chicken easily shreds. Once shredded let the chicken sit in the juice to soak up extra moisture.

Topped it on cauliflower mash. (Swipe for photo.. I like to add sour cream and cheese to this mix)

I topped off the chicken with shredded cheddar cheese, bacon crumbles and more pepperoncinis 🤩
