  Recipe by:  ghostingcarbs Casseroles are one of my fave meals.  They're super easy to make, and they are great leftovers the next day.   This one is no different!   ⠀ ⠀ Ingredients:⠀ Chicken⠀ 2 tbsp olive oil ⠀ Mushrooms⠀ 1.5 cups broccoli florets ⠀ 2 cloves of chopped garlic ⠀ @flavorgod  ranch seasoning ⠀ Salt & pepper ⠀ Half cup chicken broth ⠀ 1/4 cup heavy whipping cream⠀ Pinch of xanthan gum⠀ 1/2 cup shredded mozzarella ⠀ Handful shredded parmesan⠀ Red pepper flakes ⠀ Parsley ⠀ ⠀ Great News! KETO PUMPKIN ROLL

Here’s how I made it:
Pumpkin Roll
1 C Almond Flour
1/2 TSP Baking powder
1/2 TSP Baking soda
1 1/2 TSP Pumpkin pie spice
3 Eggs
3/4 C Granulated sweetener @truvia
1 TSP Liquid pumpkin stevia @steviaselect (if you don’t have this you can use any liquid stevia or add an extra 1/4 C granulated sweetener)
2/3 C Pure pumpkin

Beat Eggs & sugar until combined. Add pumpkin and mix will. Combine dry ingredients and add to wet ingredients and mix just until combined. Bake on a parchment lined jelly roll pan (mine is about 9x13) at 350 for about 15 minutes. While it’s baking, lay down a towel and sprinkle with powdered sweetener. As soon as your cake comes out of the oven, flip it onto the towel and roll up. Let sit for about an hour in the refrigerator. Make your filling while you are waiting.
Cream cheese filling
8 OZ Cream cheese
4 TBSP Butter
1 C powdered sweetener
2 TBSP heavy cream
1 TSP Vanilla extract (I also added some @oooflavors Vanilla frosting to really give it that sweet frosting kick)
Beat all ingredients except sweetener until smooth. Add sweetener gradually until fully combined and fluffy.

Carefully unroll your pumpkin roll and spread filling inside then roll back up. Put back into the fridge for one hour to firm up. It’s okay if your top cracks a little, we can always add some glaze, drizzle, or powdered sweetener on top. This will be the perfect fall dessert, I promise everyone will love it!
