Keto. Sugar free. Low carb. Macro friendly.
Pumpkin cookies
1/2 C butter, softened
2/3 C sweetener (I used half granulated & half golden @sonourishedinc )
1 egg yolk
1/3 C pumpkin purée
1 TSP Vanilla (I also added in some Pumpkin spice @oooflavors to really give it a boost🎃)
1 3/4 C Almond Flour (if you have Lupin flour use 1/2 C Lupin & 1 1/4 C Almond which is what I did)
1 TSP pumpkin pie spice
1 TSP baking powder
Dash of salt
Mix butter and sweetener until fluffy. Add in egg yolk, pumpkin, and vanilla and mix until combined. Add in all other ingredients and mix. Roll your cookies into 8-10 balls and press them down slightly. Bake on a parchment lined cookie sheet at 350 for about 10-12 minutes. Let cool completely, then add frosting if desired
Caramel cream cheese icing
4 Oz cream cheese, softened
3 TBSP butter, softened
2 TBSP caramel syrup (you can use homemade or store bought, I use @choczero )
2/3 C powdered sweetener
1 TSP vanilla
Beat cream cheese and butter until smooth. Add in all other ingredients and best until combined.
After my cookies cooled, I piped on the icing and sprinkled them with pumpkin pie spice. These are so delicious And the perfect fall cookie! You can even make them with just a regular cream cheese icing, or get creative and add some other fall flavors!
