  Recipe by:  ghostingcarbs Casseroles are one of my fave meals.  They're super easy to make, and they are great leftovers the next day.   This one is no different!   ⠀ ⠀ Ingredients:⠀ Chicken⠀ 2 tbsp olive oil ⠀ Mushrooms⠀ 1.5 cups broccoli florets ⠀ 2 cloves of chopped garlic ⠀ @flavorgod  ranch seasoning ⠀ Salt & pepper ⠀ Half cup chicken broth ⠀ 1/4 cup heavy whipping cream⠀ Pinch of xanthan gum⠀ 1/2 cup shredded mozzarella ⠀ Handful shredded parmesan⠀ Red pepper flakes ⠀ Parsley ⠀ ⠀ Great News! You Do NOT Have to Give Up Your Favorite  Bread, Sandwiches & Pizza  to Follow a 100%  Paleo  or  Ketogenic  Diet.. Did you guys know that you bake desserts in your air fryer?

I used my pumpkin cookie dough recipe and made a single serve cookie. I air fried the dough at 350 for about 6 minutes. Depending on how gooey or cooked you want it, you can cook a few minutes longer. I keep this dough made and stored in my freezer so I can grab some out at any time and make a cookie or a few cookies.


Low Carb pumpkin chocolate chip cookies:

1 C Almond flour
1/4 C Lupin flour (this makes the texture amazing but if you don’t have it just use more almond flour)
1 TBSP Cornstarch *see note below
1/2 TSP Salt
2 TSP Pumpkin pie spice
2 TSP Baking powder
8 TBSP Butter, softened
1/4 C Golden sweetener
1/2 C Granulated sweetener (I used @truvia )
1/4 C Pure pumpkin purée
3/4 C Chocolate chips or chunks (I use @choczero )

In a bowl cream together butter and sweetener for 1-2 minutes until light and fluffy. Add pumpkin and continue mixing about 2 minutes on low. Add in dry ingredients and stir until combined, then mix in your chocolate chips. I refrigerate my dough for at least an hour or more before baking. Trust me you don’t want to bake this dough without chilling first. After chilled, roll into 8-10 balls and bake at 375 for 10-12 minutes. Take them out before they feel completely done so they stay soft.
*Adding 1 TBSP of cornstarch will help these cookies have a soft and chewy texture, but it will add 7 carbs. You can omit this if you want.
