CHICKEN MUSHROOM & BROCCOLI CASSEROLE

  Recipe by:  ghostingcarbs Casseroles are one of my fave meals.  They're super easy to make, and they are great leftovers the next day.   This one is no different!   ⠀ ⠀ Ingredients:⠀ Chicken⠀ 2 tbsp olive oil ⠀ Mushrooms⠀ 1.5 cups broccoli florets ⠀ 2 cloves of chopped garlic ⠀ @flavorgod  ranch seasoning ⠀ Salt & pepper ⠀ Half cup chicken broth ⠀ 1/4 cup heavy whipping cream⠀ Pinch of xanthan gum⠀ 1/2 cup shredded mozzarella ⠀ Handful shredded parmesan⠀ Red pepper flakes ⠀ Parsley ⠀ ⠀ Great News! You Do NOT Have to Give Up Your Favorite  Bread, Sandwiches & Pizza  to Follow a 100%  Paleo  or  Ketogenic  Diet.. In a sauce pan, heat mushrooms in olive oil.  Stir in garlic, broccoli and seasoning.   Set aside.  ⠀ ⠀ In a baking dish, layer chicken (I seasoned and air fried the chicken) in the bottom and top with mushroom/broccoli mix.   In the same pan used to cook mushroom, add ch...

BUTTERY GARLIC PARMESAN CHICKEN TENDERS!

These were super garlicy and really easy to make in the air fryer.  ⠀

For chicken:⠀
1 tsp @flavorgod Garlic Lovers ⠀
1 tsp Onion powder⠀
1/2 tsp Paprika⠀
Salt n Pepper⠀
1/2 tsp Baking powder ⠀
Mix everything together in a bowl and set aside.  Cut up 2 chicken breasts into bite sized chicken tender pieces.  Coat the chicken with avocado oil and coat with the seasoning.  Air fry at 370 for 13 minutes.  ⠀

While chicken cooks, make the buttery garlic sauce.  ⠀
3 cloves of garlic, chopped⠀
3 tbsp butter⠀
4 tbsp shredded parmesan⠀
Handful of chopped parsley⠀
Place the butter in a small bowl and microwave until melted.  Toss the garlic and parsley into the butter and stir together.  Toss in the parmesan and then pour over the cooked chicken tenders.  ⠀

Served with a little side salad.
